Botanically, fruits and vegetables are classified depending on which part of the plant they come from. A fruit develops from the flower of a plant, while the other parts of the plant are categorized as vegetables. Fruits contain seeds, while vegetables can consist of roots, stems, and leaves.

Green, yellow, orange, red, or purple – fruits and vegetables 1 keep us healthy and add variety, flavor, and texture to our diets. In 2017, 3.9 million deaths worldwide were attributed to not consuming enough fruits and vegetables (WHO, 2019). Insufficient intake of fruit and vegetables is estimated to be the cause of around 14% of deaths from gastrointestinal cancer worldwide, 11% of deaths from ischemic heart disease, and 9% of deaths from stroke (Afshin et al., 2019).

2021 is the International Year of Fruits and Vegetables

By declaring the year 2021 as the International Year of Fruits and Vegetables, the United Nations (UN) General Assembly aims to raise awareness of fruits and vegetables’ nutritional and health benefits and their contribution to a healthy diet and lifestyle. Balanced and healthy life. It also hopes to draw attention to the need to reduce loss and waste in the fruit and vegetable sector (UN, 2020) while improving environmental performance. Action is needed at the national level to increase the production and consumption of fruits and vegetables and make them more affordable for consumers while generating economic, social and environmental benefits in line with the Sustainable Development Goals.

The International Year of Fruits and Vegetables complements other international initiatives that also support the Sustainable Development Goals and that address nutrition, consumption and health, as well as issues related to small-scale family farmers:

  • The Rome Declaration on Nutrition and Framework for Action (FAO and WHO, 2014).
  • The United Nations Decade of Action on Nutrition (2016-2025) (UN, 2016).
  • United Nations Declaration on the Rights of Peasants and Other People Working in Rural Areas (UNHRC, 2018).
  • The United Nations Decade of Family Farming 2019-2028 (ONU, 2018).
  • Global strategy on diet, physical activity and health (WHO, 2004).

The diverse range and characteristics of fresh fruits and vegetables and their inherently perishable nature justify paying particular attention to their production conditions, agronomic management, pest and disease control, harvesting techniques, and post-harvest handling systems. The UN General Assembly resolution also highlights various cross-cutting issues and factors addressed during the International Year of Fruits and Vegetables.

Small-scale producers.

Smallholders worldwide grow fruits and vegetables, either for their use or sale. Small-scale producers supply the fruit and vegetable needs of the mass markets of most developing countries. Each of these farmers produces relatively low volumes, which raises reliability and quality issues. However, there are clear opportunities for improvement in these areas.

Technologies.

Technology and innovation are needed at all stages of the fruit and vegetable supply chain, from production to consumption, to improve quality and presentation. Improvements can range from simple farm-level technologies and practices to more sophisticated digital innovations that help ensure the safety and quality of fresh produce as it moves through the supply chain. Innovative approaches, such as public-private partnerships can help generate growth and development in the sector.

Income and employment.

Fruits and vegetables are often worth more per pound than other types of food (animal products are an exception). However, they can also be more labor-intensive than many different types of food. It offers opportunities for actors throughout the chain to generate employment and income.

Gender and youth.

Women produce much of the world’s fresh produce and are often responsible for harvesting, marketing, and processing. Consumers often choose which items to buy and how to cook them. But women face disadvantages at all stages of the chain: as producers in their ability to access land, inputs, and advice, as entrepreneurs in obtaining finance to develop their businesses, as workers in terms of fair payment for their work, and as consumers in regards to education on food and nutrition. The high value of fruits and vegetables and the innovation potential open up exciting opportunities for young people to participate in the production and other aspects of the value chain.

Politics.

Food policies tend to adapt to the needs of staple crops. Fruits and vegetables have been relatively ignored regarding policy, funding, research and extension, and support for agribusiness.

What are fruits and vegetables?

There is no widely accepted definition for fruits or vegetables. The agreed purpose for the International Year of Fruits and Vegetables is as follows.

Fruits and vegetables are considered edible parts of plants (for example, seed-bearing structures, flowers, buds, leaves, stems, shoots, and roots), whether grown or harvested from the wild, in the raw state or a minimally processed form.

Excluded:

  • Starchy roots and tubers such as cassava, potatoes, sweet potatoes, and yams (although the leaves of these plants are eaten as vegetables).
  • Dried grain legumes (legumes) unless harvested immature.
  • Cereals, including corn, unless harvested when unripe.
  • Nuts, seeds, and oilseeds such as coconuts, walnuts, and sunflower seeds.
  • Medicinal plants or herbs and spices, unless used as vegetables.
  • Stimulants such as tea, cocoa and coffee.
  • Processed and ultra-processed products made from fruits and vegetables such as alcoholic beverages (e.g., wine, spirits), plant-based meat substitutes, or fruit and vegetable products with added ingredients (e.g., packaged fruit juices, ketchup) ).

Minimally processed fruits and vegetables

have been subjected to procedures such as washing, sorting, trimming, peeling, cutting or chopping that do not affect their freshness quality (Gil and Kader, 2008). Minimally processed foods retain the most inherent physical, chemical, sensory, and nutritional properties. Many minimally processed foods are just as nutritious as foods in their unprocessed form (Parrish, 2014). Examples include sliced ​​fruit, bagged fruit, salad greens, and frozen and dried fruits and vegetables.

Unlike most other food categories, fruits are typically eaten raw (not cooked): either whole (berries) or after peeling (oranges, bananas, papayas, and mongooses). Many vegetables are also often eaten raw, such as in salads. Some (kidney beans or green beans) must be cooked before eating.

The International Year of Fruits and Vegetables focuses on fresh or minimally processed products. However, it recognizes that processed fruit and vegetables are essential for farmers’ livelihoods and incomes, trade, food security and nutrition. Some varieties are grown specifically to be sold as fresh produce; others are destined from the beginning to the processing plant. 

Others can go both ways; they are selected and classified before they are sold, where the best products are sold fresh (they usually reach the highest prices), while the rest go to processing.

Many types of fruits and vegetables are processed to extend their shelf life year-round availability or increase their value. Minimal processing (see above) preserves the inherent properties of the product. On the other hand, entire processing may include juicing, fermentation, pickling, or canning in brine, juices, or syrups.

Sustainable Development Goals

Fruit and vegetable production is critical to the livelihoods of many smallholder farmers. But it can harm the environment, including soil, water, and biodiversity. The chemicals used to ensure productivity and protect the crop from pests can pollute the environment. High levels of food loss and waste result from poor handling and the perishability of fresh produce, reducing the efficiency and sustainability of the system with potentially adverse effects on the environment and natural resource base. To ensure that fruits and vegetables contribute more to nutrition and health, broader and more holistic approaches are needed. The fresh produce supply must be more efficient, inclusive and resilient (Box 1 ).

Industry Transformation: Adopting a Food Systems Approach

It is widely accepted that our food systems are increasingly detrimental to both human and planetary health. Food systems are not providing the healthy diets needed for food. The result is the increased prevalence of all forms of malnutrition (stunting, wasting, overweight, and obesity), all of which are exacerbated by the current COVID-19 pandemic. Other issues are the increase in population and consumption, greater urbanization, the increase in the rates of non-communicable diseases (WHO, 2019), the decrease in arable land and water resources for agriculture, the effects of climate change, and potential food shortages.

The Sustainable Development Goals support making the food system more productive, environmentally sustainable and resilient ( Box 1). Elements of food systems – agriculture and food supply chains, food environments and consumer behaviour – require concerted action to ensure that healthy diets are available, affordable, accessible, safe, culturally acceptable and attractive to everyone. Opportunities are needed in all food systems to improve diet and nutrition outcomes (High-Level Panel of Experts of the Committee on World Food Security, 2017). This food systems approach to improving nutrition considers food systems as a whole, considering all elements, their relationships and related effects ( Figure 1 ).

Beyond their relevance to diet and nutrition, food systems play an essential role in promoting environmental sustainability (for example, climate change adaptation and mitigation, biodiversity and land degradation and water), inclusion (e.g. viability for small farmers, indigenous peoples, gender equity) and productivity (e.g. increased production of nutritious food, economic development).

The transformation of the fruit and vegetable sector requires a holistic and global approach that considers the interconnection between demand, supply, socio-economic development, and the prices of fruits and vegetables, which are one of the main determinants of the behavior of consumers. Stronger linkages are needed between the various actors and stakeholders throughout the system to integrate sustainable practices into production, harvest, post-harvest handling, processing, and consumption. Factors that need to be taken into account to achieve better nutrition while creating a better environment, better production, and better livelihoods include facilitating access for smallholders and agribusinesses to viable markets,

Chapters 2 to 5 address the four essential elements of the fruit and vegetable sector. 

Chapter 2

 looks at how to improve and streamline consumer health and nutrition. Eating fruits and vegetables is good for us, but few consume even the minimum amounts recommended by the World Health Organization. This chapter describes the current situation and presents some reasons for the deficit.

Chapter 3

 focuses on production. It presents the production volume worldwide before concentrating on the main types of producers: small farmers, urban and peri-urban producers, and large-scale commercial farmers. The inputs required for these crops, the environmental aspects of production, and the policies and institutions that influence production are then discussed.

Chapter 4 

examines the markets and value chains that link producers to consumers. It starts by focusing on international trade, which is essential for specific crops and allows consumers to buy the food they might not otherwise get. Contract farming, which offers smallholders ways to participate in high-value markets, is then examined. It then looks at ways to link farmers to national markets (which account for the vast majority of fruits and vegetables grown and consumed worldwide) and how to add value to fresh produce. It concludes with a review of responsible business practices.

Chapter 5

focuses on quality, safety, loss and waste reduction. It highlights the cross-cutting issues and actions needed to ensure sustainability and efficiency across the food system to provide safe and good quality food.

Chapter 6

 highlights how these elements can come together to achieve more sustainable and resilient food systems that nourish both people and the planet. It lists the key issues that need to be addressed to get out of the current situation where elements of the food system function independently. What is needed is a more sustainable and systemic approach. Building blocks are better linked together to deliver nutritional and health benefits and safeguard the environment.

Like any produce eaten raw or lightly cooked, sprouts served in salads, wraps, sandwiches, and some Asian dishes can contain foodborne illness-causing bacteria. But unlike other agricultural products, sprouts germinate from seeds and legumes under hot and humid conditions. These conditions are also ideal for the growth of bacteria such as salmonella, listeria and E. coli. Even if only a few harmful bacteria were found in or on the seed, they could multiply to very high levels during germination, even if you plant the sprouts yourself at home under hygienic conditions.

Children, the elderly, pregnant women, and people with weakened immune systems (such as transplant patients and individuals with HIV/AIDS, cancer, or diabetes) should avoid consuming raw or lightly cooked sprouts of any kind (including onion, alfalfa, clover, radish and soybean sprouts). When you eat out, ask that raw sprouts not be added to your plate. If you buy a sandwich or salad at a restaurant or fast food outlet, check to avoid adding nodes.

What can consumers do to reduce the risk of illness while consuming sprouts?

  • Wash the sprouts well under running water before eating or preparing them. Washing can reduce bacteria, although it will not eliminate them.
  • Cook the sprouts well. Cooking kills harmful bacteria and reduces the risk of disease.

Fruits and vegetables play an essential role in a healthy diet. Local markets offer you a wide variety of fresh and nutritious fruits and vegetables. However, there could be harmful bacteria in the soil or water where these agricultural products grow that could contact them and contaminate them. Fresh fruits and vegetables can also become infected after being harvested, such as during storage or preparation.

Eating contaminated fruits or vegetables can lead to foodborne illness, also called “food poisoning.” So when you’re ready to enjoy some fresh produce, follow these safe handling tips to help protect yourself and your family.

You can contribute to the safety of the agricultural products you consume: use your head when you shop.

  • Buy fruits and vegetables that are not bruised or damaged.
  • When buying pre-cut fruits or vegetables, like half a watermelon or a bag of green salad, choose only those items that are chilled or surrounded by ice.
  • Bag fresh fruits and vegetables separately from raw meat, poultry, and seafood when you pack them to take home from the market.

Store properly

Proper storage of fresh fruits and vegetables can affect their quality and safety.

  • Store fresh fruits and vegetables (strawberries, lettuce, herbs, mushrooms) in a clean refrigerator at 40°F or below. Check it out with a refrigerator thermometer! Ask the grocer if you’re not sure if an item should be refrigerated to maintain quality.
  • Refrigerate all purchased pre-cut or packaged fruits and vegetables.

Keep fruits and vegetables that you will eat raw separate from raw meat, poultry, and seafood, as well as the cookware you use for these items.

  • Wash cutting boards, dishes, cookware, and countertops with hot, soapy water between preparing raw meat, poultry, or seafood and preparing fruits and vegetables that will not be cooked.
  • Use, if possible, one cutting board for fresh fruits and vegetables and a different one for raw meat, poultry, and seafood.
  • If you use plastic or non-porous cutting boards, run them through the dishwasher after use.

Prepare safely

When preparing fresh fruits and vegetables, keep your hands clean. Wash your hands with soap and warm water for at least 20 seconds before and after preparation.

  • Cut damaged or bruised parts of fresh fruits and vegetables before cooking or eating. Throw away any product that looks rotten.
  • Thoroughly wash all produce under running water before preparing or eating it, including produce grown at home or purchased at a grocery store or farmers market. It is not recommended to wash fruits and vegetables with soap, detergent or commercial products intended for cleaning them.
  • Even if you plan to peel fruits or vegetables, it’s essential to wash them first so that dirt and bacteria don’t transfer from the surface when peeling or cutting produce.
  • With a clean fruit and vegetable brush, scrub tougher vegetables and fruits, like melons and cucumbers.
  • After washing, dry products with a clean cloth or paper towel to further reduce bacteria on the surface.

What happened to washing fruits and vegetables previously?

Many pre-cut, bagged, or packaged fruits and vegetables are pre-washed and sold ready to eat. If so, it will be noted on the packaging, and you will be able to use the product without washing it.

If you choose to wash a product marked “pre-washed” or “ready-to-eat,” make sure it doesn’t come into contact with dirty surfaces or utensils to avoid cross-contamination.
