What is corned beef?

Corned Beef is a cut of beef brisket brined in a pink brine of rock salt. There is no corn in the meat, but the large kernels appear to be corn because of the pink rock salt and give the meat that salty and tart flavor. It has carrots, potatoes, and cabbage on the side when served. It is a traditional Irish meal, especially for the St. Patrick’s Day holiday.

Corned Beef Ingredients:

  • Water: Warm water is best.
  • Salt: Just a pinch.
  • Brown Sugar: This will sweeten the corned Beef.
  • Pink Curing Salt: Add a little more color to give this brisket beautiful pink meat when it’s done cooking.
  • Pickling spices help flavor the core and soak the meat in the brine.
  • Beefsteak: I prefer flat cut, but the round will also slow cook.

Vegetables:

  • Carrots: Cut the carrots into pieces.
  • Baby Potatoes: Cut these in half.
  • Onion: Cut into quarters.
  • Salt and pepper: Just a hint of flavor and taste.
  • Pickling spices: To add to the flavoring
  • Cabbage: Shred the cabbage and separated a little.

How to make corned Beef:

  1. To make the brine: Combine the warm water, salt, brown sugar, and pink curing salt and stir until the sugar and salt in a large pot dissolve. Add the brisket and top and put it in the fridge for 5-7 days until your meat brines equally. If your heart starts to float, place a heavy plate on top.

  1. To make corned Beef in the slow cooker: In a 5-quart slow cooker, add carrots, potatoes, onion, salt, and pepper. Remove brisket from brine and rinse under cold water. Place on top of the vegetables and the top breast with spices for pickling. Fill with water until the meat is almost completely covered. Cook for 7-8 hours on low and 5-6 on high, adding in the cabbage the last hour of cooking.

Add potatoes, carrots, onion, and top with cabbage: salt and pepper. Select manual setting and cook on high for 5 minutes or until vegetables are tender. Relieve pressure according to manual.
  • To make corned beef in the oven: Preheat oven to 350 degrees. Place the breast in a roasting pan and add 3 cups of water and pickling spices—Cook for 2 hours. Remove from oven and add vegetables. Bake uncovered for another hour until vegetables are tender.
