Who doesn’t like tres leches cake? It is the favourite of this house and the favourite of my family. It never disappoints.

Why is it called Tres Leches?

I would love to respond creatively, but it is simply because it is bathed in a cream made from three kinds of milk: evaporated milk, condensed milk, and heavy cream (or half cream).

One or Two Layers?

This cake is very versatile, and you can prepare it in different ways. When I made it for the first time, I made it with just one layer and super moist with all the cream.

And then I thought, what if I make it in two layers but with the same amount of the three kinds of milk? And voila, I loved it! It has the perfect sweetness, is moist, creamy, light, easy to break and serve.

But since taste breaks down into gender, I present you with three options:

  1. Prepare the traditional bread, that is, one layer and with all the three kinds of the milk mixture. If this is your option, I recommend that you bake it in a refractory (or baking pan that you can put on your table without being embarrassed) where you will serve it since the milk will make it very heavy. It will be difficult (almost impossible) to unmold it.
  2. Bake just one loaf and use half of the milk mixture (saving the other half for another time). She garnishes with whipping cream and fruit of your choice (I like strawberries or peaches). The cake will be rich, sweet and you can slice it without any problem.
  3. Bake two loaves (remember to double the loaf ingredients). Fill with a layer of whipping cream (or chantilly cream) and fruit of your choice. Garnish with more cream and fruit before serving.

Practical Tips for a Delicious Tres Leches Cake

I discovered that if I put the milk mixture on the bread while it is still hot, it absorbs quickly and easily.

Wait until completely cool before decorating or filling (in the case of a two-layer cake). Otherwise, the cream will melt instantly.

I like to serve it “naked”, that is, just covered with a light layer of icing sugar and fruit, or with whipped cream (or whipped cream) and fruit.

If you decide to use whipped cream, I recommend that you use one that is not very sweet because the cake and the fruit offer just enough sweetness. Even better, make the cream at home; this is my recipe for whipped cream. You will see that it is straightforward to prepare.

Important: This recipe’s ingredients, calories, and nutrition are for the traditional one layer cake using all the mixture of the three kinds of milk. If you want to make it with two layers, do not forget to double the quantities (only for the bread). If you decide to make one layer but a less moist one, use half of the tres leches mixture.

Ingredients

for the bread

  • Three eggs
  • 1 cup of sugar
  • One teaspoon vanilla
  • 1 cup of flour
  • 1 1/2 teaspoons baking powder
  • 1/4 cup fresh milk
  • Fruit such as fresh strawberries or a can of peaches in syrup
  • Two cups of Chantilly Cream -whipped cream- to decorate (if you make a two-layer cake, you will need 4 cups In the link, you can see my recipe.

For the Milk Mix

  • One can (14 oz) condensed milk
  • One can (12 0z) of evaporated milk
  • One can of heavy cream (whipping cream or half sweet cream)

Preheat oven to 350 F (170 C) degrees.

Place the eggs and sugar in a medium bowl and beat until foamy (approx. 3 minutes); add the vanilla and continue beating on medium speed until the preparation is about to ribbon or until the beaters leave their mark on the surface. Mixture

Sift flour and baking powder three times.

Pour a third of the dry ingredients into the mixture and incorporate with enveloping movements to reduce the eggs’ foaminess.

Add the fresh milk in one go and incorporate well; add the rest of the flour with encircling movements.

  • For the cake with only one layer with all the milk mixture: Empty the mixture in a rectangular refractory or a round mould of 9 inches (24 cm) in diameter, greased and floured.
  • For the two-layer cake (and after making double the amount of bread), divide the mixture into two 9-inch (24 cm) diameter round cake pans, greased, floured and lined with parchment paper if possible (the latter is not covered). It is vital, but it does make it easier to remove the loaves from the moulds).

Bake for 25 min approx. Or until the toothpick inserted comes out clean.

When the bread is ready, take it out of the oven and rest for five minutes.

With a toothpick or fork, make some holes so that the milk penetrates more easily.

Blend the three kinds of milk and pour over bread little by little until completely absorbed. Let it cool and put it in the refrigerator overnight.

In the case of the two-layer cake, unmold the two loaves, divide the milk mixture in two and pour over each one. Let them sit until they cool completely, and put them in the refrigerator overnight.

Garnish before serving time with whipped cream and fruit or flowers.

For the two-layer cake, Add a layer of whipping cream and fruit between the two buns. Top with more whipped cream and fruit or flowers.
