Why do potatoes turn green?

Potatoes can turn green for various reasons.

Most of the time, they turn green when not stored properly and receive some light in the process. If you leave the potatoes on the kitchen counter, they will turn green in a matter of weeks.

Potatoes turn green because they form chlorophyll, which is not necessarily harmful in itself. However, this also indicates the presence of toxins.

You may notice your potatoes turning green even before you have a chance to harvest them. It is, again, because they have been exposed to too much light. If the growing season has been too hot or sunny, or you have forgotten to insulate the potatoes, that’s probably why.

Planting potatoes too close together can also cause them to turn green, as it pushes them up off the ground as they compete for space.

Can you eat green potatoes?

  1. Chlorophyll production versus solanine.

The bad news is that green potatoes are poisonous. When a potato has been exposed to light, the skin turns green, indicating the presence of the pigment chlorophyll. The plant is trying to harvest light, hence the chlorophyll.

Chlorophyll is tasteless and not dangerous; the chlorophyll present in the green part of the potato is not a problem.

The problem lies in the fact that the “greenness” indicates another chemical lurking: a substance called solanine.

Solanine is a toxic substance that forms naturally in potatoes and related plants. It helps deter animals and insects and is found in all plant parts, including the roots, buds, flowers, fruits, and leaves.

The effects of solanine.

When ingested, solanine is very bitter and has an unpleasant taste. It can cause stomach symptoms such as diarrhea and vomiting.

Fortunately, you shouldn’t worry too much, as it takes a lot of solanine to make you sick. You would have to eat more than one potato to feel the effects. So if you accidentally eat a small piece of green potato without realizing it, chances are you won’t have a problem.

However, the big problem you will have is that the one bite will taste horrible.

Green potatoes are not good to eat. They will taste bitter and unpleasant, which will probably put you off eating the rest of the potato.

You probably won’t eat enough green potato to have any problems. However, it is important to note that the sprouts that appear on potato plants also contain high levels of solanine. It protects developing growth and provides a fresh supply of solanine to the developing plant.

So even if your potatoes aren’t green, it’s a good idea to remove any sprouts you find for eating or cooking.

Another curious fact: potatoes can increase solanine even if they are not green. If they are damaged, diseased, stored too warm, or even experience a spring frost during growth, they can be high in solanine and have a bitter taste.

What to do with green potatoes.

Whether you’ve just harvested a handful of green potatoes and aren’t sure what to do with them, or you’ve stumbled upon a batch in your pantry, here are some ways to put your green potatoes to good use.

Cook and eat them.

In many cases, you can cook and eat the potatoes as you normally would.

However, the key is to make sure you cut and peel the areas that have turned green. It may mean sacrificing most of the potato. Removing all the green areas will remove most of the bitterness.

If you notice that the potato is green, even under the skin, throw it away. It can be harmful.

Some people will tell you that you can keep eating the green potato as long as you boil it, cooking it at a high temperature for a long time. The solanine is still around after this, so don’t take any chances.

Composting.

Composting green potatoes is another solid option. Solanine poses no risk when it’s in a compost pile, so put your potatoes in there. You may need to cut them into smaller pieces to speed up the decomposition process.

Seed potatoes.

If you can wait long enough before it’s time to replant (without your potatoes rotting), you can use the sprouts as seed potatoes.

You have to check that they do not rot before the time of sowing.

Don’t feed the animals.

Animals, especially pigs and chickens, are very popular on farms. They can help convert kitchen waste.

Unfortunately, green potatoes are not foods you should give to your animals. They can make animals just as sick as us.

How to prevent potatoes from turning green.

Now that you know why your potatoes have turned green and why they’re probably not the best to eat, it’s time to cut your losses and get rid of the ones you do have.

You also have to make plans for the future. Here are some tips.

Plant at the proper depth.

One of the most common reasons potatoes turn green is because they were not planted deep enough.

The ideal is to plant the tubers at a depth of between 10 and 15 centimeters. It will help protect the potatoes from the sun’s potentially damaging rays.

Place your potatoes on a “hill.”

When you plant next year, make sure you take the time to stack the potatoes. Making sure there is enough soil around each plant will help protect the tubers from sunlight.

The process is called “hilling” because a small hill is built around the plant to cover the developing tubers. Throughout the season, the height naturally reduces due to the rains, so it is necessary to make high “hills” or to hill them again.

Otherwise, the potatoes will grow too close to the surface.

Store properly and avoid exposure to light.

When storing your potatoes, make sure they are well cured (the skin must be impenetrable with a fingernail) before storing. Please keep them in a cool, dark place, away from others like apples or onions.

Keep potatoes away from areas that give off heat, such as those near the refrigerator, stove, or dishwasher. You can store the potatoes in a paper bag if you plan to eat them soon.

Remember that factors such as heat, cold, light, or shock encourage the production of solanine, so be careful during the harvesting process can help increase yields.

Choosing which types of potatoes to plant in your garden may help to know that red potatoes are less likely to turn green than white ones.
